  9. Black Beans with Tomato and Onion over Wild Rice, served with Avocado and Lemon.

    (This recipe is Vegan!)

    1 cup rice

    1 can Black Beans (rinsed)

    A few handfuls of cherry tomatoes (halved)

    A few slices of red onion (chopped)

    Garlic Powder (to taste)

    Basil Leaves (to taste)

    Salt and Pepper (to taste)

    Half of an Avocado

    Slice of Lemon

    Olive Oil

    Follow instructions on your particular rice package. Once simmering for a while, heat up a new sauce pan on med-low and add about a Tbs of olive oil. Add the rinsed black beans, onion, and tomato and stir for a bit. You may need to adjust the temperature, depending on your stove, so nothing burns. Add garlic powder, salt and pepper, and basil leaves to taste. Keep on low until rice is ready. Serve together with sliced avocado and lemon.
